VooDoo Queen Jerky

Requirements:

·Beef (Rump Roast) ·Pure Ground Black Pepper
·Carving Knife ·VooDoo Queen Hot Sauce
·Rectangular Baking Pan ·Dehydrator and trays
·Plain Salt ·Plastic Storage Bags

Preparations:

Remove all fat, tallow, grizzle and transparent skin from the meat. (To much of these items leaves the finished product greasy and not tasty.) Slice with the grain of meat into strips about 1/4" thick by 2 inches wide by 4 to 6 inches long. (Some supermarkets will slice the meat for the customer.) Place the meat strips in a single layer in the baking pan and apply seasoning as follows: (Amount of seasoning varies with individual taste.)

Directions:

1.) Brush on an even coat of liquid smoke on each strip.
2.) Sprinkle a liberal amount of black pepper on each piece.
3.) Brush on a liberal amount of VooDoo Queen hot sauce on each piece.
4.) Sprinkle a generous amount of salt on each piece.
5.) Turn each piece over and repeat steps 1 thru 4.
6.) Place another single layer of strips in the baking pan in the opposite direction of the previous layer and repeat steps 1 thru 5.
7.) Continue seasoning each strip as outlined until all strips are seasoned.
8.) Let the strips sit in the pan for about 2 hours so that the seasoning can penetrate into the meat.
9.) Place the seasoned strips in the dehydrator tray in a single layer allowing for some air to circulate around each strip. Use additional trays until all strips are in the trays and ready to be dried.
10.) Set dehydrator temperature to about 140 degrees Fahrenheit and set timer for 8 or 9 hours.
11.) When time expires, remove the strips from the trays, place in plastic storage bags and keep refrigerated until consumed.

NOTES:
Dehydrators vary in temperature ranges. After 9 hours cut a strip in half and the inside should be a dark purple. If pink or red, increase the time of dehydration.

The higher grades of beef make better jerky. Thicker slices of meat require additional time dehydrating.

Refrigeration is required because if the dehydrator time is inadequate, a moist strip will dry out at room temperature and become UNSUITABLE FOR CONSUMPTION.
