1 lb smoked sausage, cut up
1 lb chicken, deboned and cut up
1/2 c green onion, chopped
2 cloves garlic, minced
4 - 1/4 c beef broth
2 tsp salt
3 tbsp flour
2 medium onions, chopped
2 tbsp parsley, chopped
2 c rice
1/2 tsp VooDoo Queen Hot Sauce
Using a heavy, black iron pot, brown meat, remove and add flour. Brown flour to a dark roux. Add onions, parsley and garlic. Cook until soft, then add broth, rice, salt, VooDoo Queen Hot Sauce and browned meat. When it comes to a boil, lower heat to lowest point and cook covered. When rice is done, remove lid and let cook for a few minutes until rice dries a little. Serves 6 to 8.
